Apple Cranberry Crisp
Filling:
6 tart apples (we prefer Cortland), peeled, cored and thinly sliced
1 1/4 c. cranberries (about 1 1/2 cups whole cranberrries)
2/3 c. granulated sugar
Topping:
3/4 c. rolled oats, quick or regular
1/2 c. firmly packed brown sugar
1/2 t. cinnamon
1/2 c. flour
6 T. cold butter, cut in small pieces
1/2 c. chopped pecans
Apple Cranberry Crisp

Mix filling ingredients together; spoon into a lightly buttered 11x7x2 inch baking dish. In a mixing bowl, combine oats, brown sugar, cinnamon and flour. Cut in cold butter until coarse crumbs form. Stir in chopped pecans. Sprinkle topping evenly over apples and press down lightly. Bake at 375 degrees for about 30 to 35 minutes or until topping is browned and fruit is tender and bubbly. Serve with ice cream. Delicious!!!
